Ingredients

  • 1 prime rib roast (about 6-8 pounds)

  • 2-3 carrots, chopped
  • 2-3 celery stalks, chopped

Instructions

  1. Preparation: Remove the prime rib roast from the refrigerator and let it come to room temperature for about 2 hours. This ensures even cooking.
  2. Seasoning: Preheat your oven to 450°F (230°C). In a small bowl, mix the minced garlic, olive oil, salt, pepper, and fresh herbs. Rub this mixture all over the prime rib roast.
  3. Roasting: Place the roast on a rack in a roasting pan. Surround it with the chopped onions, carrots, and celery. Pour the red wine and beef broth into the bottom of the roasting pan (if using).
  4. Initial High-Heat Roast: Roast the prime rib in the preheated oven at 450°F (230°C) for 15 minutes. This initial high heat will help form a flavorful crust.
  5. Lower Temperature: Reduce the oven temperature to 325°F (160°C) and continue roasting. For medium-rare, roast for about 15 minutes per pound, or until the internal temperature reaches 120-125°F (49-52°C). Use a meat thermometer to check the temperature.
  6. Resting: Remove the roast from the oven and let it rest for at least 20-30 minutes. The internal temperature will continue to rise, reaching the desired doneness, and the juices will redistribute throughout the meat.
  7. Carving: Carve the prime rib into thick slices and serve with the roasted vegetables and pan juices.
