Maui ribs, also known as Kalbi ribs, are a delicious and popular dish inspired by Korean cuisine. They are typically made with thinly sliced beef short ribs that are marinated in a savory and slightly sweet sauce, then grilled to perfection. Here’s a simple recipe to make Maui-style ribs at home:
Ingredients
2-3 pounds beef short ribs (thinly sliced, also known as Kalbi ribs)
1 1/4 cups soy sauce (low sodium if preferred)
1/2 to 3/4 cup brown sugar
1/2 cup water
1/4 cup chopped green onions
3 tablespoons rice vinegar
1 1/2 tablespoons sesame oil
1 1/2 tablespoons chopped garlic
1 1/2 tablespoons chopped peeled fresh ginger
1/2 teaspoon dried red pepper flakes
1/2 teaspoon ground black pepper
14-16 thinly cut beef short ribs (about 3 pounds)
Instructions
Marinate: In a large bowl, whisk together soy sauce, brown sugar, water, green onions, rice vinegar, sesame oil, garlic, ginger, red pepper flakes, and black pepper. Add the beef short ribs to the marinade, making sure they are well-coated. Cover and refrigerate for at least 24 hours, turning the ribs occasionally.
Preheat the Grill: Preheat your grill to medium heat.
Grill the Ribs: Remove the ribs from the marinade and discard the marinade. Lightly oil the grill grates and place the ribs on the grill. Grill the ribs for about 4-5 minutes per side, until cooked to your desired doneness.
Serve: Let the ribs rest for a few minutes before serving. You can serve them with rice, kimchi, or a fresh salad.
