Ribsteak, also known as ribeye steak when it’s boneless, is a luxurious cut of beef that’s known for its rich marbling, tenderness, and incredible flavor. Here’s a simple and effective way to prepare a ribsteak:

Ingredients

  • 1 ribsteak (about 1.5 to 2 inches thick)
  • Salt and pepper
  • 2 tablespoons olive oil
  • 2-3 garlic cloves, crushed
  • Fresh rosemary or thyme sprigs
  • 2 tablespoons butter

Instructions

Preparation

  1. Bring to Room Temperature: Remove the ribsteak from the refrigerator and let it sit at room temperature for about 30 minutes. This helps it cook more evenly.
  2. Seasoning: Generously season both sides of the steak with salt and freshly ground black pepper.

Cooking

  1. Preheat the Skillet: Heat a cast-iron skillet over high heat until it is very hot. Add the olive oil.
  2. Searing: Place the ribsteak in the skillet and sear for about 3-4 minutes on each side, until a nice crust forms. If the steak is very thick, you can also sear the edges for about a minute each.
  3. Butter Basting: In the last minute of cooking, add the butter, crushed garlic, and fresh herbs to the skillet. Tilt the pan and use a spoon to baste the steak with the melted butter mixture.
  4. Finish in the Oven (Optional): If you prefer your steak medium or well-done, you can transfer the skillet to a preheated oven at 400°F (200°C) and cook for an additional 5-10 minutes until it reaches your desired level of doneness.

Resting

  • Let the steak rest on a cutting board for about 5-10 minutes before slicing. This allows the juices to redistribute, making the steak even more juicy and flavorful.
