Ingredients

  • 2-3 lbs bone-in beef (short ribs, oxtail, or shank)
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3-4 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1-2 cups red wine (optional)
  • 4 cups beef broth
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • Fresh thyme and rosemary sprigs
  • Salt and pepper to taste
  • Potatoes (optional, chopped)
  • Mushrooms (optional, sliced)

Instructions

  1. Searing the Beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Season the beef generously with salt and pepper. Sear the beef on all sides until browned, then remove and set aside.
  2. Sautéing Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
  3. Deglazing: If using red wine, pour it into the pot to deglaze, scraping up any browned bits from the bottom. Let it simmer for a few minutes to reduce slightly.
  4. Adding Liquids and Herbs: Add the beef broth, tomato paste, bay leaves, and fresh herbs. Stir well to combine.
  5. Simmering: Return the beef to the pot, ensuring it’s submerged in the liquid. If using potatoes and mushrooms, add them at this stage. Bring the stew to a boil, then reduce the heat to low and cover. Let it simmer gently for 2.5 to 3 hours, or until the meat is tender and falls off the bone.
  6. Final Adjustments: Taste the stew and adjust the seasoning with more salt and pepper if needed. Remove the bay leaves and herb sprigs before serving.
